With Saint Patrick’s Day right around the corner, take some time to bake some Irish Soda Bread to brighten up your March. This recipe belonged to my grandmother, and I hope it brings some cheer into this otherwise uneventful holiday.
Ingredients:
- 1 cup raisins
- 1 cup boiling water
- 4 cups of flour
- 1 tablespoon of baking powder
- 1 teaspoon baking soda
- ½ cup sugar
- 2 eggs
- 1 ½ cup buttermilk
Steps:
- Put all ingredients but raisins into a mixer and blend.
- Add raisins and knead with a dough hook for 2 to 4 minutes.
- Place in a greased, floured, round cake pan. (Preferably a 9 inch pan so the middle cooks evenly)
- Cut an X on top and drizzle a tablespoon of melted butter in the center.
- Bake at 350 degrees for 45-55 minutes. Cool for 20 minutes.
